Directions
A refined form of “Schmarren”, is a preparation of pancake dough and is one of the best-known sweet dishes of Austrian cuisine. The name derives from Emperor Franz Joseph I.
As a court kitchen patissier, who especially liked to create particularly light desserts for the notoriously line-conscious Empress Elisabeth, was unable to land with a new composition of omelette dough and plum cake in the culinary delights of the Empress, his Majesty jumped into the breach and ate the portion of the Empress, with the words, “Well, let’s get the Schmarren, which our Leopold has cooked there.”
