Fluffy American pancakes
The American pancakes are already clearly different from most of the pancake varieties known in Europe. The pancakes that are common in the USA and Canada usually have a diameter of about 10 cm (there are also coin-sized versions) and are significantly thicker and fluffier. The consistency is achieved by a relatively thick dough (1: 1) and the addition of driving means (soda or baking powder). Often the pancakes are prepared instead of milk with buttermilk. Traditionally, pancakes are eaten in the Americas for breakfast. Often served with maple syrup, blueberry pancakes also belong to the classics, where the blueberries are mostly baked in the dough. In recent years, however, pancakes have become increasingly popular and are now being eaten in a variety of hearty and sweet variants for dinner. As sweet doughs are also sweetened, the American pancakes are much sweeter than their European relatives.
